As usual, the wine year begins with the pruning of vines, performed by our winegrowers in the rather warm winter months of 2016. The above-average warm spring favors the early awakening of the vines, who barely escaped the unexpected late frost on April 28th and 29th. The wet and warm weather characterizing May, persists for the rest of the summer. Hence, the strong growth of vines requires a great deal of manual labor and experience from our winegrowers. Since the ripening process doesn’t begin until early August, we start preparing for a later grape harvest.

The damp summer, however, is followed by an unexpectedly dry and sunny autumn. September and October both provide optimal conditions for a selective harvest. Furthermore, the considerable difference in temperature between day and night enhance maturity and flavor development in this crucial phase.

Bringing our knowledge about the terroir, we harvest the individual charges separately. On September 8th, only one week later than in the previous year, the grape harvest begins with Pinot Grigio, Sauvignon and Chardonnay, followed by Vernatsch, Pinot Noir and Lagrein in late September and early October. Pinot Blanc from the high-lying vineyards in Sirmian, as well as Merlot and Cabernet from Margreid are harvested in the second half of October. On October 23rd, we complete the harvest at the Baron Salvadori Manor by laying out the Moscato Giallo grapes for drying for our BARONESSE Passito.

We expect 2016 to be a particular vintage for both white and red wines. The white wines, which are now maturing in their barrels on the fine yeast, present themselves intensely fruity, rich and complex, full of multilayered elegance. The red wines are already showing promising, delicate flavors, balanced acidity, and remarkable flow. Our Selection white wines, however, are particularly promising this year. In order to give these wines the opportunity to fully develop to their potential, we will extend the aging period in barrel and bottle. Therefore, as indicated in the price list, the Selection white wines will be on sale starting between May and July.
